Being from the South, I love cobblers. I happen to stop at a roadside market the other day and they were selling blackberries. I used to pick blackberries on the side of the road when I was a kid and can remember my Mom making jellies and cobblers with them. Please enjoy this recipe! If you don’t like blackberries, you can substitute the fruit with peaches or blueberries and it will still be delicious.
Now that fall is here and winter is approaching it’s the time to start thinking about making fudge. This fudge is rich and chocolatey! It was always a staple during the holiday season when my late husband was alive. It was one of his favorite sweets.
I remember as a child my Mom would cook stuffed bell peppers. I was never a fan as I didn’t like the bell pepper, but I did love what was on the inside: hamburger meat and rice. Luckily for me, my Mom didn’t insist that I eat the bell pepper. As an adult I still make them and still don’t eat the bell pepper.
One of my favorite things to eat growing up was pecans, which was probably due to the fact that my parents had a pecan orchard that we harvested each year. Mom use to make this recipe for us when we were kids and for all types of parties and weddings over the years.
I just discovered a new food that I like…Banana Bread and boy is it delicious. I had always turned my nose up to it when someone offered me any in the past; however, my husband asked me to bake some and now I’m in love with it. The recipe below is from my cookbook, “Cooking with Mom”, which is a collection of recipes from friends and family that I created back in 2007. I baked this bread in my convection oven.
My late husband’s father could cook a great soup and this recipe was always a delight whether we ate it at his house or ours. Make some cornbread to go with it and you will have a wonderful meal to share with your family and friends. Perfect recipe for fall, which is just around the corner.
This recipe has been altered from the original that I found in “Pecan Lovers Cookbook” as I prefer to use a pre-made pie crust and not as many pecans. Other than that this is a great recipe and a great tasting cheesecake.

I could not believe that one of the ingredients was chili sauce. Totally blew my mind and I almost didn’t eat any because I was afraid they wouldn’t taste good. Luckily I was very wrong, because they are delicious. I included them in the appetizer section of my cookbook, but they could also be served as an entrée over rice, which is what I do most of the time. Make sure you don’t add the dressing until ready to serve. I add what I want to each persons individual bowl. NEVER mix with salad and put in refrigerator. Never refrigerate dressing.
